Fifty of Perth’s top chefs came together last night for AMP Capital’s first Industry Commentary Series, presented in partnership with the WA Good Food Guide.
The three-part Industry Commentary Series will be held during September and October, each session tailored towards a specific audience within the food and beverage industry. The first session, held at Must Wine Bar on Beaufort Street in Highgate, focused on the business challenges faced by chefs and chef-operators working in an ever-changing market.
Keynote speaker and industry favourite Mike McEnearny, executive chef and owner of Kitchen by Mike and No. 1 Bent Street by Mike, lent his time and some 25 years of experience to the group, recounting his time working in junior kitchen positions through to heading some of the world’s finest restaurants in Sydney and London. Beginning with the topic of “How important is the kitchen in a modern, competitive restaurant?”, moderator and Food Editor of The West Australian Rob Broadfield enabled discussion on matters that modern chefs face; from kitchen and waste management, modern staffing challenges, setting up restaurants and more.
Attendees enjoyed a bespoke menu prepared by Must’s Chef Russell Blaikie, including all-Western Australian sourced ingredients and paired with a delicious array of wines from the Margaret River region.
The AMP Capital X WA Good Food Guide Industry Commentary Series will continue throughout September and October, ahead of the WA Good Food Guide Awards, presented by AMP Capital Shopping Centres, on October 29th 2018.
